Ingredients & Substitutions
Blueberries: Fresh blueberries are best in the homemade blueberry filling. If using frozen berries, the mixture may need a few more minutes to come to a boil. In a pinch, you could use store-bought pie filling, but the dessert will not have as much flavor.
Cornstarch: Cornstarch is added to thicken the blueberry sauce. When the cornstarch is combined with water and heated, it forms a gel-like mixture that thickens as it cooks.
Buttermilk: If you don’t have any on hand, make buttermilk. Using milk in the recipe will not give the tanginess you get from the buttermilk.
Butter: With these being butter swim biscuits, meaning they will be ‘swimming’ in butter, you will need a stick of unsalted butter. Salted butter resulted in the biscuits being a bit too salty for this dessert.
How To Serve Butter Swim Biscuit Blueberry Cobbler
This dessert is delicious right out of the oven as-is, but you could certainly add other ingredients and/or toppings! Here are some options:

- Whipped Cream
- Lemon zest: Add a little bit of zest to the filling for a bright and zesty flavor.
- Mixed Berries: Blueberries are delicious on their own, but you could always mix in other berries like raspberries, blackberries, or strawberries for a medley of flavors.
Can I Make This In A Different Pan?
Sure! If preferred, you could use a 10-inch oven-safe skillet like a cast iron skillet. Then, you could make this dessert all in one dish. Or, use a 9-inch square baking dish or a 9-inch or 10-inch round cake pan. Watch the dessert carefully, as baking times may need to be adjusted.
How To Store Butter Swim Biscuit Blueberry Cobbler
Although best served fresh, you can definitely save the leftovers for a few days. After the dessert has cooled, cover it and store it in the refrigerator. It will last up to 3-4 days. Reheat the biscuit blueberry cobbler in the microwave or in the oven at a low temperature until warm.
Butter Swim Biscuit Blueberry Cobbler
Ingredients
Blueberry filling
- 1 cup (200 g) granulated sugar
- 3 tablespoons cornstarch
- ⅛ teaspoon kosher salt
- ¼ cup water
- 4 cups (592 g) fresh blueberries, divided
Butter Swim Biscuits
- 2 ½ cups (312.5 g) all-purpose flour
- 4 teaspoons baking powder
- 2 tablespoons granulated sugar
- 1 teaspoon kosher salt
- 2 cups (490 g) buttermilk
- ½ cup (1 stick / 113 g) unsalted butter, melted
Instructions
- Preheat oven to 450°F. Set out a 9×13-inch baking dish.
Blueberry Filling
- To a medium saucepan over medium heat, add sugar, cornstarch, and salt. Slowly drizzle in water, whisking constantly until smooth.
- Add half of the blueberries. Increase the heat to medium and bring the mixture to a boil. Continue cooking until thickened (about 4-5 minutes). Then fold in the remaining blueberries. Remove from heat as you prepare the biscuit dough.
Biscuits
- To a medium bowl, add flour, baking powder, sugar, and salt. Use a whisk to sift the ingredients.
- Pour in the buttermilk and stir until mostly combined, being careful not to overwork the batter.
Assembly
- Pour the blueberry filling into the baking dish.
- Using a spoon, dollop the biscuit dough on top of the blueberry filling. Carefully spread it into an even layer. Evenly drizzle the melted butter over the top.
- Bake for 20-25 minutes, or until biscuits are golden brown and cooked through.
- Let the butter swim biscuit blueberry cobbler rest for about 5 minutes before serving. Enjoy!
