No Bake Strawberry Cheesecake

As summer meanders its way into our lives, I am having a glorious time thinking of all the wonderfully refreshing and easy desserts I can make.  Sometimes baking in the summer is just not something I look forward too, so still being able to enjoy a fabulous dessert without turning on my oven is such a treat!

This sweet little cheesecake could not be easier!  With only four ingredients and then a delectable vanilla crust, you really can’t go wrong.

No Bake Strawberry Cheesecake Recipe

How to Make No Bake Strawberry Cheesecake

So simple but so creamy, folks will never know you didn’t slave away! Grab your ingredients:

  • cream cheese
  • granulated sugar
  • strawberry extract
  • whipped topping

Beat together the cream cheese, sugar, and extract in your stand mixer or using a hand-hand mixer. Mix for 3-5 minutes or until the ingredients are smooth and creamy. Now stir the whipped topping in by hand and pour into your prepared pie crust. Chill for 3 hours, then garnish with more whipped topping and some fresh strawberries! How easy is that?

How to Make Vanilla Cookie Crust

For my crust, I used vanilla cookies (like Vanilla Oreo’s or Nilla Wafers) that were finely ground.  (A food processor works great, but feel free to add the cookies to a bag and smash away! Great way to get out some frustrations!)

In total, there was about 1 cup of the crumbs, to which I added 2 tablespoons of melted butter. Stir the crumbs and butter together well (I use a fork) and make sure all of the crumbs are coated in butter. Because we are not baking the crust you want the butter to act as the glue when the crust is refrigerated.

Then press into the bottom of a prepared 7-inch springform pan!  Easy peasy. If you are making this no-bake strawberry cheesecake in a large pan you will need more crust. 

You can also use chocolate Oreo’s for a sweet chocolate crust!

No-Bake Strawberry Cheesecake is the perfect dessert for anyone with a cheesecake craving!

Ingredients

  • 2 packages (16 ounces total) cream cheese, room temperature
  • 1/2 cup granulated sugar
  • 2 tablespoons McCormick® Imitation Strawberry Extract
  • 8 ounces whipped topping

Instructions

  • Beat cream cheese, sugar, and extract in large bowl with electric mixer on medium speed until well blended and smooth. Gently stir in whipped topping by hand. Spoon into crust.
  • Refrigerate 3 hours or until set. Garnish with fresh strawberries or whipped topping.
  • Store leftover cheesecake in refrigerator.

  1. Wouldn’t the addition of some chopped fresh strawberries make this better? I don’t really “get” the strawberry flavoring instead of the fresh strawberries.

  5. Aldi sells freeze dried strawberries. You can Put them in a food processor (or crush them in the bag) and add the strawberry powder in place of strawberry flavoring. So yummy!!

  6. Thank You so much for this recipe and the recipe for the vanilla cookie crust. Not too long ago, I bought some strawberry extract online. Now I have another reason to use it
