I made these for a family event yesterday, and they were a huge huge hit! I only have one recommendation; make sure you let them sit out from the refrigerator before serving. The crust was very hard to cut, but after they sat out for a bit, it was absolute perfection.

I never do. I use ine pkg of oreos, and 1/4 melted butter. Process in food processor. I use different cookies for different cheesecakes. For instance. Fruit flan? Vanilla cookies. Lime ? Coconut. Pumpkin ? Ginger etc etc. But the icing deserves to be left in to emulsify, sweeten and just plain yum! ( and less work.

What do you do with the filling that you take out of the Oreo cookies? Can you put it in the whip cream or something? I wasn’t clear about that.

Excellent recipe, I would change the wording of heavy cream to whipping cream for the icing, as 18% cream didn’t work.
