I like my ginger cookies a little snappy so I over mix them a little. Everyone loves them!

Delicious cookie. Easy recipe. It took me 1 hour and 10 minutes from start to finish. That included prep, bake, cleanup, and cooling time. I rolled mine in cinnamon sugar instead of plain sugar because I am a sucker for cinnamon. Next time I will roll in plain sugar just to see the difference. By next time I mean tomorrow. LOL

Goes together easy, FAST. Most kitchens will have everything but molasses. SOFT and chewy, NOT cake like! I chose to modify a bit. This is 2nd batch! I reviewed a lot of recipes and kept returning to this. 10+ stars!!!

No, you don’t “have” to use dark brown sugar. If you want the same results as what I have described and pictured, you should use dark brown sugar.

In reply to Paulette.

I have seen crystallized ginger in a cookie recipe. I would use fresh ginger in cooking, might be too strong in a cookie.
