Hi Thomas,
I don’t believe the article was contradictory. Fresh and shelf stable are two different things. Salt will allow butter to stay in your fridge longer without going rancid, but that doesn’t mean it is fresh. I hope that helps!

Isn’t that a contradiction, “salted butter is usually not as fresh as unsalted butter…salt is a natural preservative and gives salted butter a longer shelf life”; therefore, in my humble opinion, salted stays fresh longer. Or am I confusing myself by the wording, i.e., salted has a longer shelf life but does not stay fresh as long?
