I found a bag of Arrowhead organic buckwheat pancake mix in my cupboard this morning and decided to try and use it instead of regular whole wheat flour. I only used half the salt and baking powder as the Arrowhead mix had some in it already. I also ended up needing more milk as well. I was astounded by the results and from now on will be making these with the buckwheat mix, really, really yummy!

This recipe made the fluffiest and lightest pancakes ever! 🥞 I added some honey and a few tablespoons of sugar, delicious! Considering it’s just my husband and I, next time I will cut the recipe in half. Meanwhile, I’m freezing the rest of our pancakes, it sure supplied us with plenty. Great recipe!! It was more starter than I usually keep but luckily I’d shifted my discard into a new starter pot so I had the perfect amount plus the leftover for my starter to be fed. Makes the biggest batch of pancakes! I fed my 2yo, 6yo, husband plus a sneaky one for the cook and I’ve enough leftover to feed the same all over again. I saw the comments about adding sugar and threw in half a cup with no apparent adverse effects. Thank you!
