Today I used another recipe as I didn’t want to wait for the half hour rest time. The waffles were okay, but didn’t compare to the Frankenstein waffles. I’ll never “stray” again! Will just plan ahead a little more.

Hi, Ryoan! I work with iambaker and am happy to help with questions. Sure! Once the waffles have cooled completely, lay the waffles on a baking sheet and place them in the freezer to freeze (about 2 hours). After the waffles have frozen, store them in freezer-safe containers, separated by parchment paper, for up to three months. When ready to enjoy the frozen waffles, pop them in a toaster oven to warm them up. You can also bake them in the oven for about 5 minutes at 425°F. Instead of sugar add bananas,
blueberries, sautéed apples with butter and cinnamon….. The sugar doesn’t affect the recipe. But for you, this still needs to be taken into consideration because of your pre diabetes.
