Peach Bellini

A Peach Bellini is a fizzy cocktail that is made with peaches and prosecco or champagne. It is similar to a mimosa, but a mimosa is made with orange juice. If you love Prosecco, check out my Cranberry Mimosa and Creamsicle Prosecco cocktails. All of these drinks are fun to serve any time of the year, but always extra fun during the holidays!

Bellini Ingredients

There are just three simple ingredients in this cocktail.

Peaches: I used frozen peaches that have been thawed. You want to add the thawed peaches and the peach juice to the blender. To thaw the peaches, put them in the refrigerator to thaw overnight. Or, set them out at room temperature to thaw (about 4 hours).

Sugar: I added just a tablespoon of granulated sugar to the mix. However, you could leave it out.

Prosecco: Prosecco is a sparkling white wine made from Glera grapes. You could substitute champagne in the drink, but champagne is made from different grapes. If you would like a family-friendly (non-alcoholic) version of the drink, simply replace the Prosecco. There are many varieties of non-alcoholic sparkling white wines to choose from.

Can I Use Fresh Peaches?

Yes! You could also puree fresh peaches, but they do need to be peeled first. You would need 3-4 medium peaches for this recipe. To peel the peaches, you can use a paring knife to make a few slits in the peel. Then, the peel usually comes right off.

Another method to peel the peaches is to blanch the peaches. To blanch the peaches, get a pot of water boiling. Put the peaches in the boiling water for 10-20 seconds. Then, use a slotted spoon to immediately place the peaches in ice water to stop the cooking process. The skins should easily come off with a paring knife after they have been put in the ice water.

Can I Make this Drink without Alcohol?

Yes! The drink would still be bubbly and refreshing using a non-alcoholic sparkling wine; there is a wide variety to choose from. Or, simply top off the drink with soda water!

Ingredients

  • 15 ounces frozen peaches, thawed
  • 1 tablespoon granulated sugar
  • 1 bottle (750 milliliters) Prosecco or champagne, chilled

Instructions

  • To a blender, add the peaches (with the juice) and sugar. Mix until blended and smooth.
  • Fill a glass halfway with the blended peaches. Top with Prosecco; gently stir. Cheers!
